Steirisches Wurzelfleisch
Styrian root-vegetable pork — boiled pork shoulder with root vegetables in broth, served with horseradish and pumpernickel.

Ingredients
- 1kg pork shoulder
- 2 carrots
- 1 celeriac, quartered
- 2 parsnips
- 1 leek
- 1 tbsp black peppercorns
- 3 bay leaves
- fresh horseradish and cider vinegar dressing to serve
Method
- Place pork in a large pot, cover with cold water, bring to a simmer and skim.
- Add all vegetables, peppercorns, bay leaves, and salt. Simmer gently for 1.5 to 2 hours.
- Remove pork and slice. Arrange on a plate with the boiled vegetables.
- Dress with a splash of cider vinegar and sunflower oil. Serve with freshly grated horseradish and pumpernickel.
