Styrian root-vegetable pork — boiled pork shoulder with root vegetables in broth, served with horseradish and pumpernickel.

Ingredients

  • 1kg pork shoulder
  • 2 carrots
  • 1 celeriac, quartered
  • 2 parsnips
  • 1 leek
  • 1 tbsp black peppercorns
  • 3 bay leaves
  • fresh horseradish and cider vinegar dressing to serve

Method

  1. Place pork in a large pot, cover with cold water, bring to a simmer and skim.
  2. Add all vegetables, peppercorns, bay leaves, and salt. Simmer gently for 1.5 to 2 hours.
  3. Remove pork and slice. Arrange on a plate with the boiled vegetables.
  4. Dress with a splash of cider vinegar and sunflower oil. Serve with freshly grated horseradish and pumpernickel.
