Veal paprikash — tender veal in a lush cream and sweet paprika sauce served over egg noodles.

Ingredients
- 800g veal shoulder, cubed
- 2 onions, finely diced
- 2 tbsp sweet paprika
- 200ml sour cream
- 200ml veal stock
- 2 tbsp lard
- egg noodles to serve
Method
- Saute onions in lard until golden. Remove from heat and stir in paprika.
- Add veal, return to heat, and brown lightly. Add stock, cover, and simmer 40 minutes.
- Stir in sour cream and simmer uncovered 10 minutes until the sauce is rich and coating.
- Serve over freshly cooked egg noodles (Eiernudeln).
