Veal paprikash — tender veal in a lush cream and sweet paprika sauce served over egg noodles.

Ingredients

  • 800g veal shoulder, cubed
  • 2 onions, finely diced
  • 2 tbsp sweet paprika
  • 200ml sour cream
  • 200ml veal stock
  • 2 tbsp lard
  • egg noodles to serve

Method

  1. Saute onions in lard until golden. Remove from heat and stir in paprika.
  2. Add veal, return to heat, and brown lightly. Add stock, cover, and simmer 40 minutes.
  3. Stir in sour cream and simmer uncovered 10 minutes until the sauce is rich and coating.
  4. Serve over freshly cooked egg noodles (Eiernudeln).
