Tyrolean cheese noodles — egg-drop Spätzle layered with melted mountain cheese and crispy fried onions.

Ingredients

  • 300g plain flour
  • 4 eggs
  • 100ml milk
  • 1 tsp salt
  • 200g Bergkase or Gruyere, grated
  • 3 large onions, thinly sliced
  • 3 tbsp butter

Method

  1. Make the Spatzle batter: mix flour, eggs, milk, and salt until smooth and slightly elastic.
  2. Press batter through a Spatzle grater or colander into boiling salted water. Cook until they float, about 2-3 minutes. Drain.
  3. Fry onions in butter very slowly for 20-25 minutes until deeply caramelised.
  4. Layer Spatzle and cheese in a warm dish, mixing gently. Top with caramelised onions. Serve immediately.
