Käsespätzle
Tyrolean cheese noodles — egg-drop Spätzle layered with melted mountain cheese and crispy fried onions.

Ingredients
- 300g plain flour
- 4 eggs
- 100ml milk
- 1 tsp salt
- 200g Bergkase or Gruyere, grated
- 3 large onions, thinly sliced
- 3 tbsp butter
Method
- Make the Spatzle batter: mix flour, eggs, milk, and salt until smooth and slightly elastic.
- Press batter through a Spatzle grater or colander into boiling salted water. Cook until they float, about 2-3 minutes. Drain.
- Fry onions in butter very slowly for 20-25 minutes until deeply caramelised.
- Layer Spatzle and cheese in a warm dish, mixing gently. Top with caramelised onions. Serve immediately.
