Gebackener Emmentaler
Breaded and fried Emmental cheese slices — golden and melting inside, with tartare sauce and rocket.

Ingredients
- 4 thick slices Emmental cheese (about 1cm thick)
- 100g plain flour
- 2 eggs, beaten
- 150g breadcrumbs
- oil for frying
- tartare sauce, lemon, rocket to serve
Method
- Coat cheese in flour, then egg, then breadcrumbs. Press firmly so no cheese is exposed.
- Fry in hot oil 2 minutes per side until golden. Work quickly — the cheese melts fast.
- Drain on a wire rack and serve immediately with tartare sauce, lemon, and rocket.
