Velvety potato soup with smoked bacon garnish, chives, and Styrian pumpkin seed oil.

Ingredients

  • 800g floury potatoes, diced
  • 1 onion, diced
  • 1 carrot, 1 celery stalk diced
  • 1L vegetable or chicken stock
  • 200ml sour cream
  • 100g smoked bacon, diced and fried

Method

  1. Saute onion, carrot, and celery in butter until soft. Add potatoes and stock.
  2. Simmer 25 minutes until potatoes are very tender. Blend until smooth.
  3. Stir in sour cream. Season.
  4. Serve topped with crispy bacon, fresh chives, and a drizzle of pumpkin seed oil.
