Erdäpfelsuppe
Velvety potato soup with smoked bacon garnish, chives, and Styrian pumpkin seed oil.

Ingredients
- 800g floury potatoes, diced
- 1 onion, diced
- 1 carrot, 1 celery stalk diced
- 1L vegetable or chicken stock
- 200ml sour cream
- 100g smoked bacon, diced and fried
Method
- Saute onion, carrot, and celery in butter until soft. Add potatoes and stock.
- Simmer 25 minutes until potatoes are very tender. Blend until smooth.
- Stir in sour cream. Season.
- Serve topped with crispy bacon, fresh chives, and a drizzle of pumpkin seed oil.
