Gebackene Topfenknödel
Fried quark dumplings — Topfen, semolina, and egg, deep-fried until golden and dusted with icing sugar.

Ingredients
- 250g Topfen (quark), well-drained
- 100g fine semolina
- 2 eggs
- 50g icing sugar
- pinch vanilla and salt
- oil for frying
Method
- Mix Topfen, semolina, eggs, icing sugar, vanilla, and salt. Rest 20 minutes.
- Form into small balls with wet hands.
- Deep-fry at 170C for 3-4 minutes until golden all over.
- Drain and dust generously with icing sugar. Serve warm.
