Malakofftorte
No-bake Viennese cream cake made with ladyfingers, rum syrup, vanilla cream, and toasted almonds.

Ingredients
- 300g ladyfingers
- 100ml rum mixed with 100ml milk or coffee
- 500ml double cream
- 250g mascarpone or cream cheese
- 80g caster sugar
- 1 tsp vanilla extract
- 80g toasted sliced almonds
- cocoa powder to dust
Method
- Whip cream with sugar and vanilla until soft peaks form. Fold in mascarpone until smooth.
- Briefly dip ladyfingers in the rum mixture. Do not soak too long or they will collapse.
- Layer dipped ladyfingers and vanilla cream in a springform tin.
- Repeat layers until all ingredients are used, finishing with cream on top.
- Chill at least 6 hours, preferably overnight.
- Decorate with toasted almonds and a light dusting of cocoa before serving.
