No-bake Viennese cream cake made with ladyfingers, rum syrup, vanilla cream, and toasted almonds.

Ingredients

  • 300g ladyfingers
  • 100ml rum mixed with 100ml milk or coffee
  • 500ml double cream
  • 250g mascarpone or cream cheese
  • 80g caster sugar
  • 1 tsp vanilla extract
  • 80g toasted sliced almonds
  • cocoa powder to dust

Method

  1. Whip cream with sugar and vanilla until soft peaks form. Fold in mascarpone until smooth.
  2. Briefly dip ladyfingers in the rum mixture. Do not soak too long or they will collapse.
  3. Layer dipped ladyfingers and vanilla cream in a springform tin.
  4. Repeat layers until all ingredients are used, finishing with cream on top.
  5. Chill at least 6 hours, preferably overnight.
  6. Decorate with toasted almonds and a light dusting of cocoa before serving.
