Crescent-shaped Austrian vanilla biscuits made with buttery almond dough and rolled in vanilla sugar.

Ingredients

  • 250g plain flour
  • 200g unsalted butter, cold and cubed
  • 100g ground almonds or hazelnuts
  • 80g icing sugar
  • 1 tsp vanilla extract
  • pinch salt
  • 100g vanilla sugar, for coating

Method

  1. Mix flour, ground nuts, icing sugar, and salt in a bowl.
  2. Rub in cold butter and vanilla until the dough comes together. Do not overwork.
  3. Wrap and chill for 30 minutes.
  4. Roll dough into small ropes and shape into crescents.
  5. Place on a lined baking tray and bake at 170C for 10-12 minutes until pale golden at the edges.
  6. While still warm, carefully roll in vanilla sugar.
  7. Cool completely before storing in an airtight tin.
