Vanillekipferl
Crescent-shaped Austrian vanilla biscuits made with buttery almond dough and rolled in vanilla sugar.

Ingredients
- 250g plain flour
- 200g unsalted butter, cold and cubed
- 100g ground almonds or hazelnuts
- 80g icing sugar
- 1 tsp vanilla extract
- pinch salt
- 100g vanilla sugar, for coating
Method
- Mix flour, ground nuts, icing sugar, and salt in a bowl.
- Rub in cold butter and vanilla until the dough comes together. Do not overwork.
- Wrap and chill for 30 minutes.
- Roll dough into small ropes and shape into crescents.
- Place on a lined baking tray and bake at 170C for 10-12 minutes until pale golden at the edges.
- While still warm, carefully roll in vanilla sugar.
- Cool completely before storing in an airtight tin.
