Erdäpfelgulasch
Hearty potato goulash — a vegetarian version with potatoes, caraway, marjoram, and sweet and smoked paprika.

Ingredients
- 1kg waxy potatoes, diced
- 2 large onions, diced
- 3 tbsp lard or oil
- 2 tbsp sweet paprika
- 1 tsp smoked paprika
- 1 tsp caraway seeds
- 1 tsp dried marjoram
- 2 garlic cloves
- 500ml vegetable stock
Method
- Cook onions in lard over low heat for 20 minutes until very soft and golden.
- Remove from heat. Stir in both paprikas, caraway, and garlic. Return to heat for 1 minute.
- Add potatoes and stock. Season well. Simmer covered for 25-30 minutes until potatoes are tender.
- Finish with marjoram and serve with crusty bread or dark rye.
