Styrian braised veal cheeks with pumpkin seed oil, root vegetables, and fresh lovage.

Ingredients

  • 4 veal cheeks, trimmed
  • 2 carrots, diced
  • 1 celeriac, diced
  • 1 onion, diced
  • 200ml white wine
  • 400ml veal stock
  • 2 tbsp Styrian pumpkin seed oil
  • fresh lovage to finish

Method

  1. Season and sear veal cheeks until well browned. Remove.
  2. Saute vegetables until lightly coloured. Deglaze with wine and reduce.
  3. Return cheeks with stock. Cover and braise at 150C for 2.5 hours until silky.
  4. Plate cheeks with braising vegetables. Drizzle with pumpkin seed oil and scatter fresh lovage.
