Steirische Kalbsbackerl
Styrian braised veal cheeks with pumpkin seed oil, root vegetables, and fresh lovage.

Ingredients
- 4 veal cheeks, trimmed
- 2 carrots, diced
- 1 celeriac, diced
- 1 onion, diced
- 200ml white wine
- 400ml veal stock
- 2 tbsp Styrian pumpkin seed oil
- fresh lovage to finish
Method
- Season and sear veal cheeks until well browned. Remove.
- Saute vegetables until lightly coloured. Deglaze with wine and reduce.
- Return cheeks with stock. Cover and braise at 150C for 2.5 hours until silky.
- Plate cheeks with braising vegetables. Drizzle with pumpkin seed oil and scatter fresh lovage.
