Pan-fried salt cod fritters with potato, parsley, and marjoram — a traditional Friday dish.

Ingredients
- 400g salt cod, soaked overnight and flaked
- 400g mashed potato
- 2 eggs
- 1 onion, finely diced and sauteed
- 2 tbsp fresh parsley, chopped
- 1 tsp dried marjoram
- breadcrumbs to coat
Method
- Mix flaked cod with mashed potato, eggs, onion, parsley, and marjoram. Season well.
- Shape into patties and coat in breadcrumbs.
- Pan-fry in butter over medium heat 3-4 minutes per side until golden.
- Serve with green salad and a wedge of lemon.
