Ingredients

  • 400g salt cod, soaked overnight and flaked
  • 400g mashed potato
  • 2 eggs
  • 1 onion, finely diced and sauteed
  • 2 tbsp fresh parsley, chopped
  • 1 tsp dried marjoram
  • breadcrumbs to coat

Method

  1. Mix flaked cod with mashed potato, eggs, onion, parsley, and marjoram. Season well.
  2. Shape into patties and coat in breadcrumbs.
  3. Pan-fry in butter over medium heat 3-4 minutes per side until golden.
  4. Serve with green salad and a wedge of lemon.
