Kaspressknödel Suppe
Pan-crisped Tyrolean cheese dumplings served in a clear beef consommé with chives.

Ingredients
- 200g mountain cheese (Bergkase), grated
- 3 stale bread rolls, finely torn
- 2 eggs
- 2 tbsp plain flour
- 2 tbsp fresh chives
- butter for frying
- 1L clear beef consomme
Method
- Mix torn bread, cheese, eggs, flour, and chives together. Season. Rest 15 minutes.
- Form into flat, palm-sized patties.
- Fry in butter over medium heat until golden and crispy on both sides.
- Place 2-3 Kaspressknödel in each soup bowl and ladle hot consomme over them.
