Kaspressknödel Suppe

Pan-crisped Tyrolean cheese dumplings served in a clear beef consommé with chives.

Ingredients

  • 200g mountain cheese (Bergkase), grated
  • 3 stale bread rolls, finely torn
  • 2 eggs
  • 2 tbsp plain flour
  • 2 tbsp fresh chives
  • butter for frying
  • 1L clear beef consomme

Method

  1. Mix torn bread, cheese, eggs, flour, and chives together. Season. Rest 15 minutes.
  2. Form into flat, palm-sized patties.
  3. Fry in butter over medium heat until golden and crispy on both sides.
  4. Place 2-3 Kaspressknödel in each soup bowl and ladle hot consomme over them.
