Eierspeise mit Schnittlauch

Soft Austrian scrambled eggs — very slowly stirred over low heat until silky and creamy, topped with fresh chives.

Ingredients

  • 8 eggs
  • 4 tbsp butter
  • 4 tbsp sour cream or creme fraiche
  • fresh chives generously chopped

Method

  1. Beat eggs lightly with a pinch of salt.
  2. Melt butter in a pan over the lowest possible heat. Add eggs.
  3. Stir very slowly and continuously with a wooden spoon — never stop moving the eggs.
  4. When barely set and still glossy, remove from heat immediately. Stir in sour cream.
  5. Serve on dark bread with a very generous amount of chives.
