Eierspeise mit Schnittlauch
Soft Austrian scrambled eggs — very slowly stirred over low heat until silky and creamy, topped with fresh chives.

Ingredients
- 8 eggs
- 4 tbsp butter
- 4 tbsp sour cream or creme fraiche
- fresh chives generously chopped
Method
- Beat eggs lightly with a pinch of salt.
- Melt butter in a pan over the lowest possible heat. Add eggs.
- Stir very slowly and continuously with a wooden spoon — never stop moving the eggs.
- When barely set and still glossy, remove from heat immediately. Stir in sour cream.
- Serve on dark bread with a very generous amount of chives.
