Thick goulash soup with tender beef, sweet paprika, caraway, onions, and potatoes. A Würstelstand staple.

Ingredients

  • 400g beef shin, diced small
  • 400g onions, diced
  • 2 tbsp lard
  • 2 tbsp sweet paprika
  • 1 tsp caraway seeds
  • 400g potatoes, diced
  • 1.5L beef stock
  • 2 garlic cloves

Method

  1. Cook onions in lard until deeply golden, 25-30 minutes. Off the heat, stir in paprika and garlic.
  2. Return to heat. Add beef and brown lightly. Add stock. Simmer covered 45 minutes.
  3. Add potatoes and caraway. Simmer a further 20 minutes until everything is tender.
  4. The soup should be thick and richly coloured. Serve with a crusty Semmel roll.
