Ingredients

  • 200g beef liver, finely minced
  • 4 stale bread rolls, soaked and squeezed
  • 1 egg
  • 1 onion, finely grated
  • 1 tsp dried marjoram
  • 1L clear beef consomme

Method

  1. Mix liver with squeezed bread, egg, onion, and marjoram. Season well.
  2. With wet hands, form into golf-ball sized dumplings.
  3. Simmer in salted water for 15 minutes until firm.
  4. Transfer to bowls and ladle hot consomme over them. Scatter with chives.
