Leberknödelsuppe
Clear beef broth with Leberknödel — rich liver dumplings made from beef liver, bread, marjoram, and egg.

Ingredients
- 200g beef liver, finely minced
- 4 stale bread rolls, soaked and squeezed
- 1 egg
- 1 onion, finely grated
- 1 tsp dried marjoram
- 1L clear beef consomme
Method
- Mix liver with squeezed bread, egg, onion, and marjoram. Season well.
- With wet hands, form into golf-ball sized dumplings.
- Simmer in salted water for 15 minutes until firm.
- Transfer to bowls and ladle hot consomme over them. Scatter with chives.
