Frittatensuppe
Beef consommé with paper-thin crêpe strips — deeply flavoured broth with the lightest possible garnish.

Ingredients
- 2 eggs
- 100ml milk
- 50g plain flour
- 1L excellent beef consomme
Method
- Whisk eggs, milk, and flour into a very thin batter. Rest 10 minutes.
- Fry very thin crepes in a lightly buttered pan — almost translucent.
- Stack, roll tightly, and slice into fine ribbons.
- Place in warm bowls and pour over the hot consomme. Add chives.
