Ingredients

  • 2 eggs
  • 100ml milk
  • 50g plain flour
  • 1L excellent beef consomme

Method

  1. Whisk eggs, milk, and flour into a very thin batter. Rest 10 minutes.
  2. Fry very thin crepes in a lightly buttered pan — almost translucent.
  3. Stack, roll tightly, and slice into fine ribbons.
  4. Place in warm bowls and pour over the hot consomme. Add chives.
