Ingredients

  • 4 tbsp plain flour
  • 2 tbsp lard or butter
  • 1L beef broth
  • 1 onion, finely diced
  • sour cream to serve (optional)

Method

  1. Cook flour in lard over medium heat, stirring constantly, until it turns deep golden and smells nutty. This takes 8-10 minutes.
  2. Add onion and stir 2 minutes. Gradually pour in broth, whisking to prevent lumps.
  3. Simmer 10 minutes. Season. Serve with a dollop of sour cream and dark bread.
