Toasted flour soup — browned flour in a dark roux let down with beef broth. Rustic Alpine peasant soup.

Ingredients
- 4 tbsp plain flour
- 2 tbsp lard or butter
- 1L beef broth
- 1 onion, finely diced
- sour cream to serve (optional)
Method
- Cook flour in lard over medium heat, stirring constantly, until it turns deep golden and smells nutty. This takes 8-10 minutes.
- Add onion and stir 2 minutes. Gradually pour in broth, whisking to prevent lumps.
- Simmer 10 minutes. Season. Serve with a dollop of sour cream and dark bread.
