Styrian pumpkin cream soup — Hokkaido pumpkin blended with onions and cream, finished with pumpkin seed oil.

Ingredients

  • 1kg Hokkaido pumpkin, seeded and diced
  • 2 onions, diced
  • 2 tbsp butter
  • 600ml vegetable stock
  • 200ml double cream
  • 2 tbsp Styrian pumpkin seed oil, to finish

Method

  1. Saute onions in butter until soft. Add pumpkin and cook 5 minutes.
  2. Add stock, simmer 20 minutes until pumpkin is completely tender.
  3. Blend until very smooth. Stir in cream and season well.
  4. Serve drizzled with pumpkin seed oil and scattered with roasted pumpkin seeds.
