Kürbiscremesuppe
Styrian pumpkin cream soup — Hokkaido pumpkin blended with onions and cream, finished with pumpkin seed oil.

Ingredients
- 1kg Hokkaido pumpkin, seeded and diced
- 2 onions, diced
- 2 tbsp butter
- 600ml vegetable stock
- 200ml double cream
- 2 tbsp Styrian pumpkin seed oil, to finish
Method
- Saute onions in butter until soft. Add pumpkin and cook 5 minutes.
- Add stock, simmer 20 minutes until pumpkin is completely tender.
- Blend until very smooth. Stir in cream and season well.
- Serve drizzled with pumpkin seed oil and scattered with roasted pumpkin seeds.
