Bohnensuppe mit Speck
White bean soup with smoked bacon, carrots, and savory herb — a filling rural Austrian soup.

Ingredients
- 400g dried white beans, soaked overnight
- 150g smoked bacon, diced
- 2 carrots, diced
- 1 onion, diced
- 2 garlic cloves
- 1 sprig summer savory or thyme
- 1.5L water or light stock
Method
- Fry bacon until starting to crisp. Add onion and carrots, cook 5 minutes.
- Add drained beans, garlic, savory, and stock. Bring to a boil.
- Simmer 50-60 minutes until beans are completely tender.
- Mash a third of the soup for a thicker consistency. Season and serve with dark bread.
