White bean soup with smoked bacon, carrots, and savory herb — a filling rural Austrian soup.

Ingredients

  • 400g dried white beans, soaked overnight
  • 150g smoked bacon, diced
  • 2 carrots, diced
  • 1 onion, diced
  • 2 garlic cloves
  • 1 sprig summer savory or thyme
  • 1.5L water or light stock

Method

  1. Fry bacon until starting to crisp. Add onion and carrots, cook 5 minutes.
  2. Add drained beans, garlic, savory, and stock. Bring to a boil.
  3. Simmer 50-60 minutes until beans are completely tender.
  4. Mash a third of the soup for a thicker consistency. Season and serve with dark bread.
