Ingredients

  • 1 can (400g) crushed tomatoes
  • 500ml vegetable stock
  • 1 onion and 1 garlic clove, diced
  • 2 tbsp butter
  • 80g short-grain rice
  • 1 tsp sugar
  • sour cream to serve

Method

  1. Saute onion and garlic in butter. Add tomatoes, stock, sugar, and dried basil.
  2. Simmer 15 minutes. Blend until smooth.
  3. Add rice and simmer a further 15 minutes until cooked.
  4. Season and serve with a spoonful of sour cream.
