Tomatensuppe mit Reis
Austrian tomato soup with short-grain rice — a humble homestyle soup found in family kitchens everywhere.

Ingredients
- 1 can (400g) crushed tomatoes
- 500ml vegetable stock
- 1 onion and 1 garlic clove, diced
- 2 tbsp butter
- 80g short-grain rice
- 1 tsp sugar
- sour cream to serve
Method
- Saute onion and garlic in butter. Add tomatoes, stock, sugar, and dried basil.
- Simmer 15 minutes. Blend until smooth.
- Add rice and simmer a further 15 minutes until cooked.
- Season and serve with a spoonful of sour cream.
