Lentil soup Austrian-style — green lentils with smoked sausage, root vegetables, caraway, and wine vinegar.

Ingredients
- 300g green lentils, rinsed
- 2 smoked sausages, sliced
- 2 carrots, 1 onion, 1 celery stalk diced
- 1 tsp caraway seeds
- 1.2L stock
- 2 tbsp cider or wine vinegar
Method
- Saute onion, carrots, and celery. Add lentils, caraway, and stock.
- Simmer 30-35 minutes until lentils are tender.
- Add sliced sausage and heat through. Season with vinegar, salt, and pepper.
- The vinegar is essential — it lifts the whole soup. Serve with dark bread.
