Lentil soup Austrian-style — green lentils with smoked sausage, root vegetables, caraway, and wine vinegar.

Ingredients

  • 300g green lentils, rinsed
  • 2 smoked sausages, sliced
  • 2 carrots, 1 onion, 1 celery stalk diced
  • 1 tsp caraway seeds
  • 1.2L stock
  • 2 tbsp cider or wine vinegar

Method

  1. Saute onion, carrots, and celery. Add lentils, caraway, and stock.
  2. Simmer 30-35 minutes until lentils are tender.
  3. Add sliced sausage and heat through. Season with vinegar, salt, and pepper.
  4. The vinegar is essential — it lifts the whole soup. Serve with dark bread.
