Kohlsuppe
Savoy cabbage soup with smoked pork hock, caraway, and potatoes. Long-simmered and comforting.
Ingredients
- 1 smoked pork hock
- half savoy cabbage, shredded
- 3 potatoes, diced
- 2 carrots, diced
- 1 tsp caraway seeds
- 2L water
Method
- Cover the hock with cold water. Bring to a boil, skim, then simmer 45 minutes.
- Add carrots, potatoes, cabbage, and caraway. Simmer a further 30-35 minutes.
- Remove hock, shred the meat, and return to the soup. Discard skin and bone.
- Season and serve with dark bread.
