The Austrian pub spread — Topfen and butter blended with paprika, caraway, capers, anchovies, and chives.

Ingredients
- 250g Topfen (quark)
- 100g butter, softened
- 1 tbsp sweet paprika
- 1 tsp caraway seeds
- 2 tbsp chives, chopped
- 1 tbsp capers, chopped
- 2 anchovy fillets, minced
- 1 tsp mustard
Method
- Beat Topfen and butter together until smooth.
- Stir in all remaining ingredients. Season to taste.
- Rest 30 minutes before serving. Spread on dark rye with radishes and a cold beer.
