Street-roasted chestnuts — scored and roasted over charcoal in paper bags. The scent of Viennese November.

Ingredients
- 500g fresh chestnuts
- coarse salt to serve
Method
- Score a deep cross on the flat side of each chestnut — this stops them exploding.
- Place in a chestnut pan or roasting pan. Roast over charcoal or at 200C for 15-20 minutes.
- They are done when the scored skin curls back and the flesh is tender.
- Peel while still hot and serve in paper bags with coarse salt.
