Pan-fried pressed cheese dumplings with a golden crust and melting mountain cheese centre.

Ingredients
- 200g mountain cheese (Bergkase), grated
- 3 stale bread rolls, finely torn
- 2 eggs
- 2 tbsp flour
- 2 tbsp chives
- butter for frying
Method
- Combine torn bread, cheese, eggs, flour, and chives. Season. Rest 15 minutes.
- Form into flat patties about 7cm across.
- Fry in butter over medium heat 3-4 minutes per side until golden with melting cheese.
- Serve with a green salad or float in beef consomme.
