Gebratene Kaspressknödel

Pan-fried pressed cheese dumplings with a golden crust and melting mountain cheese centre.

Ingredients

  • 200g mountain cheese (Bergkase), grated
  • 3 stale bread rolls, finely torn
  • 2 eggs
  • 2 tbsp flour
  • 2 tbsp chives
  • butter for frying

Method

  1. Combine torn bread, cheese, eggs, flour, and chives. Season. Rest 15 minutes.
  2. Form into flat patties about 7cm across.
  3. Fry in butter over medium heat 3-4 minutes per side until golden with melting cheese.
  4. Serve with a green salad or float in beef consomme.
