Kaiserschmarrn
Emperor's torn pancake — fluffy shredded pancake with rum-soaked raisins, dusted in icing sugar, with plum compote.

Ingredients
- 4 eggs, separated
- 120g plain flour
- 200ml whole milk
- 1 tbsp caster sugar
- 1 tsp vanilla extract
- 40g raisins, soaked in rum
- 30g unsalted butter
- 2 tbsp icing sugar, to serve
Method
- Whisk egg yolks, flour, milk, sugar, and vanilla into a smooth batter.
- Whisk egg whites with a pinch of salt to firm peaks. Fold gently into batter.
- Melt butter in an ovenproof pan. Pour in batter, scatter raisins. Cook 3-4 minutes until base sets.
- Transfer to 180C oven for 5 minutes until just set on top.
- Using two forks, tear into rough pieces in the pan. Return to heat, add a tablespoon of sugar, and toss until caramelised.
- Dust with icing sugar and serve with warm Zwetschkenroster (plum compote).
