Emperor's torn pancake — fluffy shredded pancake with rum-soaked raisins, dusted in icing sugar, with plum compote.

Ingredients

  • 4 eggs, separated
  • 120g plain flour
  • 200ml whole milk
  • 1 tbsp caster sugar
  • 1 tsp vanilla extract
  • 40g raisins, soaked in rum
  • 30g unsalted butter
  • 2 tbsp icing sugar, to serve

Method

  1. Whisk egg yolks, flour, milk, sugar, and vanilla into a smooth batter.
  2. Whisk egg whites with a pinch of salt to firm peaks. Fold gently into batter.
  3. Melt butter in an ovenproof pan. Pour in batter, scatter raisins. Cook 3-4 minutes until base sets.
  4. Transfer to 180C oven for 5 minutes until just set on top.
  5. Using two forks, tear into rough pieces in the pan. Return to heat, add a tablespoon of sugar, and toss until caramelised.
  6. Dust with icing sugar and serve with warm Zwetschkenroster (plum compote).
