Ingredients
- 3 eggs
- 250ml milk
- 125g plain flour
- pinch salt
- butter for frying
- 200g smooth apricot jam
Method
- Whisk eggs, milk, flour, and salt into a smooth thin batter. Rest 15 minutes.
- Melt a small amount of butter in a crepe pan. Pour in a thin layer of batter and swirl.
- Cook 1-2 minutes until golden, flip, cook 30 seconds more.
- Spread with apricot jam, roll up tightly, and dust with icing sugar. Serve immediately.
