Ingredients

  • 3 eggs
  • 250ml milk
  • 125g plain flour
  • pinch salt
  • butter for frying
  • 200g smooth apricot jam

Method

  1. Whisk eggs, milk, flour, and salt into a smooth thin batter. Rest 15 minutes.
  2. Melt a small amount of butter in a crepe pan. Pour in a thin layer of batter and swirl.
  3. Cook 1-2 minutes until golden, flip, cook 30 seconds more.
  4. Spread with apricot jam, roll up tightly, and dust with icing sugar. Serve immediately.
